cilantro/pepita pesto

Serves 4 (approx. 1/4 cup per person)

  • 2 Cups
    Cilantro Leaves, washed
  • 2
    Cloves Garlic
  • 1/2 - 1 Cup
    Raw Pepitas (pumpkin seeds), toasted in a smidge of olive oil until they begin to pop
  • Pinch
    Salt and Pepper
  • 1 Teaspoon
    Cumin (fresh toasted and ground seeds are the best!)
  • 1
    Lime - juice of 1 lime (or ½ lime if it’s a juicy one)
  • 1/2 Cup
    Olive Oil
  • Pinch
    Hot Pepper Flakes (optional)


  1. whiz the cilantro, garlic, pepitas and spices in a food processor

  2. then stir in the lime juice and olive oil

  3. serve with enchiladas, on egg burritos, on grilled veggies, on crackers and cheese…..etc. etc.
